Gluten free pizza dough for crust is a definite must have for anyone with a gluten intolerance. Many people do not have pizzerias nearby that offer gluten free pizza, and often think making your own is quite the difficult task – so a lot of us just go without pizza. While there are some great mixes that you can buy for gluten free pizza crusts, here is a delicious gluten free pizza crust recipe that you can make on your own.
What you will need:
1/4 cup millet flour
3/4 cup white rice flour (or use a mixture of brown rice and white rice flour)
1/4 cup sweet rice flour
1/4 cup arrowroot starch (or use cornstarch or more tapioca starch)
1/2 cup tapioca flour
2 teaspoons xanthan gum
3/4 teaspoon salt
1 1/2 Tablespoons sugar
1 teaspoon sugar for proofing yeast
2 1/2 teaspoons active dry yeast
3/4 cup warm water, (heated to 115 -120 degrees)
2 Tablespoons ricotta cheese
2 eggs
2 1/2 Tablespoons olive oil
1/2 teaspoon red wine vinegar or apple cider vinegar
1 Tablespoon Honey
Directions:
Put your pizza pan in the oven and heat the oven to 170 degrees. Mix olive oil, ricotta cheese, honey, and vinegar into a medium sized bowl and set aside (to allow the ingredients to become room temperature). Next, mix all the dry ingredients except yeast and sift together in a stand mixer bowl. Heat ¾ cup of water until close to boil. In a separate bowl, mix your yeast and teaspoon of sugar. Mix with ¼ up of heated water, stir, and let sit. Double check and make sure your ingredients are all room temperature. Mix your dry ingredients with the mixer while adding the egg and the ricotta mixture you had set aside earlier. Then, after mixing these ingredients, add the yeast mixture. Check the dough- you want it to look life stiff cake batter. Add the rest of the water slowly until the right consistency is achieved. NOTE: It is best to gauge the amount of water needed since different flours absorb water differently.
Once the dough is finished, take the pan out of the oven and turn the oven off. Put parchment paper over the pan and brush olive oil over the paper. With a scraper, slowly spread the dough batter in a 12-13 inch circle. Make sure it’s distributed evenly. Then, create a crust edge to your pizza.
NOTE: it may help to cover your hands in olive oil to handle the sticky dough. Once your pizza is shaped, put it in back in the oven to rise for 40 minutes. Then, bake at 350 degrees for about 10 minutes.
Afterward, take the crust out and add toppings. Be sure to double check and make sure your toppings are gluten free. Certain bagged cheeses have gluten, as well as many processed meat. Cook at 400 degrees for about 7 minutes, or until cheese is melted (if using cheese). Be careful as time varies with the oven.
Let the pizza cool for about 5 minutes before serving. Enjoy a real pizza crust made from scratch!
